Our Mallow Rocky Road recipe is the ultimate indulgence; Creamy milk chocolate smothering crispy biscuits, soft marshmallows, salty nuts and sweetly tart cranberries. You can create your own variations by using different biscuits and fruits, and of course different Mallow flavours of marshmallow.
500 grams Milk Chocolate
1 pack plain vanilla biscuits
1 pack of your favourite Great Day Mallow
100 grams (about 1/2 cup) dried cranberries
70 grams (about 1/2 cup) of toasted pistachios
Line a 6x9 inch baking tray with grease-proof paper.
Melt the chocolate in a large heat proof bowl over a pot of barely simmering water, then set aside to slightly cool.
Roughly chop the biscuits.
Cut the marshmallow pieces in half.
Fold the chopped biscuits, marshmallow pieces, cranberries and pistachios into the chocolate.
Pour the mix into the baking tray, smoothing it out with an offset spatula or the back of a spoon, and chill in the fridge for 2-3 hours.
Once cool, remove the Rocky Road from the baking tray and cut into squares or rectangles.
